- 1 head cauliflower
- 1 cup mixed veggies (such as chopped onions, bell peppers, and carrots)
- 2 eggs, scrambled
- 1 tablespoon olive oil

- Remove the leaves and stem from the cauliflower, and cut the head into florets.
