How to Make a Delicious Quinoa Bowl with Roasted Veggies and Tahini Dressing

  • 1/2 cup quinoa

  • 1 cup water

  • Salt to taste

  • 1 sweet potato, peeled and cubed

  • 1 zucchini, sliced

  • 1 cup cherry tomatoes

  • 2 tbsp olive oil

  • 1/4 tsp paprika

  • Salt and pepper to taste

  • 1/4 cup tahini

  • 2 tbsp lemon juice

  • 1 clove garlic, minced

  • 1/4 tsp cumin

  • 2-3 tbsp water


Step 1: Cook the quinoa
Rinse the quinoa under running water and drain. In a medium saucepan, bring 1 cup of water to a boil. Add the quinoa and a pinch of salt, reduce the heat to low, and cover the pot. Cook for about 15 minutes or until the water has been absorbed and the quinoa is tender.

Step 2: Roast the veggies
Preheat your oven to 400°F (200°C). In a large mixing bowl, toss the sweet potato cubes, sliced zucchini, and cherry tomatoes with olive oil, paprika, salt, and pepper. Spread the veggies on a baking sheet and roast in the oven for 20-25 minutes, or until they are tender and lightly browned.

Step 3: Make the tahini dressing
In a small mixing bowl, whisk together the tahini, lemon juice, minced garlic, cumin, and 2-3 tbsp of water. Continue whisking until the mixture is smooth and creamy.

Step 4: Assemble the quinoa bowl
Divide the cooked quinoa between two bowls. Top each bowl with the roasted veggies and drizzle with the tahini dressing.
